Ingredients
- 400g lean lamb loin, cut into 2-3 cm cubes
- 1 large eggplant, cut into 2-3 cm cubes
- 1 red bell pepper, cut into 2-3 cm squares
- 1 red onion, cut into wedges
- 250g cherry tomatoes
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
- 200g plain Greek yogurt
- 1 clove garlic, minced
- 20g fresh mint, finely chopped
- 1 tablespoon lemon juice
Instructions
- 1.If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.
- 2.In a large bowl, combine the lamb cubes, eggplant, bell pepper, and red onion. Drizzle with olive oil and sprinkle with oregano, paprika, salt, and pepper. Toss well to coat everything evenly.
- 3.Thread the marinated lamb and vegetables onto the skewers, alternating between them. Add a cherry tomato at each end.
- 4.Preheat a grill or a large griddle pan over medium-high heat. Cook the skewers for 10-15 minutes, turning occasionally, until the lamb is cooked through and the vegetables are tender and slightly charred.
- 5.While the skewers are cooking, prepare the sauce. In a small bowl, mix the Greek yogurt, minced garlic, chopped mint, and lemon juice. Season with a pinch of salt.
- 6.Serve the hot skewers immediately with the cool mint-yogurt sauce on the side.
