Ingredients
- 400g lean lamb leg steak, cut into 2cm cubes
- 200g dry quinoa
- 2 red bell peppers, chopped
- 2 medium zucchinis, chopped
- 400g cherry tomatoes, halved
- 1 large red onion, sliced
- 3 cloves garlic, minced
- 45ml extra virgin olive oil, divided
- 40ml fresh lemon juice
- 15g fresh mint, finely chopped
- 15g fresh parsley, finely chopped
- Salt and freshly ground black pepper to taste
Instructions
- 1.Rinse the quinoa under cold water. In a medium pot, combine the quinoa with 400ml of water and a pinch of salt. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until the water is absorbed and the quinoa is fluffy. Set aside.
- 2.Preheat your oven to 200°C. On a large baking sheet, toss the chopped bell peppers, zucchini, cherry tomatoes, and red onion with half of the olive oil (about 22ml), salt, and pepper.
- 3.Roast the vegetables for 20-25 minutes, or until they are tender and slightly caramelized.
- 4.While the vegetables are roasting, pat the lamb cubes dry and season them with the minced garlic, salt, and pepper.
- 5.Heat the remaining olive oil in a large skillet or pan over medium-high heat. Add the lamb cubes and sear for 5-7 minutes, turning occasionally, until browned on all sides and cooked to your desired doneness.
- 6.In a small bowl, whisk together the fresh lemon juice, chopped mint, and chopped parsley to create the vinaigrette.
- 7.To assemble, divide the cooked quinoa among four bowls. Top with the roasted vegetables and the seared lamb. Drizzle generously with the lemon-mint vinaigrette before serving.
