Ingredients
- 300g cod fillets (2 fillets)
- 1 can (400g) chickpeas, rinsed and drained
- 150g fresh spinach
- 1 lemon
- 1 small bunch fresh parsley
- 1 small bunch fresh dill
- 2 cloves garlic
- 1/4 red onion
- 30ml olive oil
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. Line a baking sheet with parchment paper.
- 2.Finely chop the parsley, dill, and one clove of garlic. In a small bowl, mix them with the zest of the lemon, 15ml of olive oil, salt, and pepper to create a paste.
- 3.Pat the cod fillets dry, place them on the baking sheet, and press the herb paste evenly onto the top of each fillet.
- 4.Bake for 12-15 minutes, or until the cod is opaque and flakes easily with a fork.
- 5.While the cod bakes, heat the remaining 15ml of olive oil in a large pan over medium heat. Mince the second garlic clove and thinly slice the red onion, then sauté for 2-3 minutes until soft.
- 6.Add the rinsed chickpeas to the pan and cook for 3-4 minutes until warmed through.
- 7.Add the spinach to the pan in handfuls, stirring continuously until it just wilts. Remove the pan from the heat.
- 8.Squeeze the juice from the lemon over the warm salad, season with salt and pepper, and stir to combine.
- 9.Divide the warm chickpea and spinach salad between two plates and place a baked cod fillet on top to serve immediately.
