Ingredients
- 400g sweet potato
- 150g brown or green lentils, dry
- 100g fresh spinach
- 50g walnuts, roughly chopped
- 75g pasteurized feta cheese, crumbled
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 45ml olive oil
- 30ml lemon juice
- Salt and black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. Peel and dice the sweet potato into 2cm cubes. On a baking sheet, toss the cubes with 15ml of olive oil, salt, and pepper. Roast for 25-30 minutes, until tender and lightly caramelized.
- 2.While the potatoes roast, rinse the lentils. Place them in a saucepan with 500ml of water, bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until tender but not mushy. Drain any excess water.
- 3.In a small, dry pan over medium heat, toast the chopped walnuts for 3-5 minutes until fragrant, watching carefully to prevent burning. Set aside.
- 4.Prepare the dressing by whisking together the remaining 30ml of olive oil, lemon juice, minced garlic, a pinch of salt, and pepper in a small bowl.
- 5.In a large bowl, combine the warm cooked lentils, roasted sweet potatoes, and the finely chopped red onion.
- 6.Pour the dressing over the lentil mixture and toss gently to combine everything evenly.
- 7.Add the fresh spinach to the warm salad and stir. The residual heat will gently wilt the leaves.
- 8.Serve the salad immediately, topped with the crumbled pasteurized feta cheese and the toasted walnuts.
