Ingredients
- 300g ground lamb
- 150g red lentils, dry
- 1 large red bell pepper, chopped
- 1 medium zucchini, chopped
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 30ml olive oil
- 1 lemon, juiced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 15g fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- 1.Preheat your oven to 200°C (400°F). On a baking sheet, toss the chopped bell pepper and zucchini with half the olive oil, salt, and pepper. Roast for 15-20 minutes, until tender and slightly caramelized.
- 2.While the vegetables roast, rinse the red lentils and place them in a saucepan with 500ml of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until tender. Drain any excess water.
- 3.In a medium bowl, combine the ground lamb, chopped red onion, half the minced garlic, ground cumin, ground coriander, half the chopped parsley, and a pinch of salt and pepper. Mix well and form into small, bite-sized meatballs.
- 4.Heat the remaining olive oil in a large skillet over medium-high heat. Add the meatballs and cook for 8-10 minutes, turning occasionally, until browned on all sides and cooked through.
- 5.In a large serving bowl, combine the warm cooked lentils, roasted vegetables, the remaining minced garlic, and the remaining chopped parsley.
- 6.Drizzle the lemon juice over the lentil and vegetable mixture and toss everything together to combine.
- 7.To serve, divide the warm lentil salad between two plates and top with the spiced lamb meatballs.
