- 400g can of chopped tomatoes
- 240g can of chickpeas, rinsed and drained
- 100g fresh spinach
- 15ml olive oil
- 1 tsp dried oregano
- Juice of 1/2 lemon
- Fresh dill, for garnish
- Salt and black pepper to taste
Instructions
- 1.Heat olive oil in a large skillet over medium-high heat. Add the chopped onion and sliced fennel, cooking for 5-7 minutes until softened and lightly caramelized.
