Ingredients
- 400g lean ground lamb
- 200g brown or green lentils, dry
- 30ml extra virgin olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 red bell pepper, diced
- 400g canned chopped tomatoes
- 750ml low-sodium vegetable broth
- 1 teaspoon dried oregano
- 1 sprig fresh rosemary
- 1 bay leaf
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the ground lamb and cook until browned, breaking it up with a spoon. Drain any excess fat.
- 2.Add the chopped onion, carrots, and celery to the pot. Sauté for 5-7 minutes until the vegetables begin to soften.
- 3.Stir in the minced garlic and cook for another minute until fragrant, then add the diced red bell pepper and dried oregano.
- 4.Rinse the lentils thoroughly. Add the rinsed lentils, chopped tomatoes, vegetable broth, rosemary sprig, and bay leaf to the pot. Season with a pinch of salt and pepper.
- 5.Bring the stew to a boil, then reduce the heat to low, cover, and let it simmer for 30-35 minutes, or until the lentils are tender.
- 6.Remove the bay leaf and rosemary sprig before serving. Stir in the fresh lemon juice and adjust seasoning if needed. Serve hot.
