Ingredients
- 400g lean ground lamb
- 30ml extra virgin olive oil
- 1 large onion, chopped
- 2 medium carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 5g ground cumin
- 5g ground coriander
- 2.5g turmeric powder
- 400g canned crushed tomatoes
- 200g brown lentils, rinsed
- 1 liter low-sodium vegetable broth
- 150g fresh spinach
- 1 lemon, for juice
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- 1.Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the onion, carrots, and celery and cook until softened, about 5-7 minutes.
- 2.Add the minced garlic, cumin, coriander, and turmeric. Cook for 1 minute until fragrant.
- 3.Add the ground lamb to the pot. Break it up with a spoon and cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
- 4.Stir in the crushed tomatoes, rinsed lentils, and low-sodium vegetable broth. Season with a pinch of salt and pepper.
- 5.Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the lentils are tender.
- 6.Stir in the fresh spinach and cook for 2-3 minutes until it has wilted completely.
- 7.Remove from heat and stir in the juice of half a lemon. Serve hot, garnished with fresh parsley.
