Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped (~150g)
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon smoked paprika
- 1 large sweet potato, peeled and cubed (~300g)
- 150g red lentils, rinsed
- 400g can diced tomatoes
- 750ml vegetable broth
- 100g kale, stems removed and roughly chopped
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook for 5-7 minutes, until softened and translucent.
- 2.Add the minced garlic, cumin, turmeric, and smoked paprika. Stir continuously for 1 minute until fragrant.
- 3.Add the cubed sweet potato, rinsed lentils, diced tomatoes, and vegetable broth to the pot. Stir to combine, increase the heat, and bring to a boil.
- 4.Once boiling, reduce the heat to a simmer. Cover and cook for 20-25 minutes, or until the lentils and sweet potatoes are tender.
- 5.Stir in the chopped kale and cook for another 3-5 minutes, until the kale has wilted into the stew.
