Ingredients
- 250g lamb mince
- 1 large sweet potato (approx. 300g), cubed
- 100g brown or green lentils, rinsed
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 150g fresh spinach
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and black pepper to taste
- 100g plain Greek yogurt
- 1 tablespoon tahini
- Juice of 1/2 lemon
- 1 tablespoon chopped fresh dill
Instructions
- 1.Place the cubed sweet potato in a pot with the rinsed lentils and cover with 500ml of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until both are tender. Drain any excess water.
- 2.While the lentils and sweet potato are cooking, heat 1 tablespoon of olive oil in a large pan over medium-high heat. Add the chopped onion and cook for 3-4 minutes until softened.
- 3.Add the minced garlic, ground cumin, and ground coriander to the pan. Cook for another minute until fragrant. Add the lamb mince, breaking it up with a spoon, and cook until browned all over, about 5-7 minutes. Season with salt and pepper.
- 4.Once the lamb is cooked, add the fresh spinach to the pan and stir until it has wilted completely, about 2-3 minutes.
- 5.In a small bowl, whisk together the Greek yogurt, tahini, lemon juice, and fresh dill to create the sauce. Season with a pinch of salt if desired.
- 6.To serve, divide the cooked lentil and sweet potato mixture between two bowls. Top with the cooked lamb and spinach, then drizzle generously with the yogurt-tahini sauce.
