Ingredients
- 300g ground lamb
- 150g quinoa
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 medium zucchini, chopped
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 60ml extra virgin olive oil, divided
- 1 lemon, juice and zest
- 20g fresh parsley, chopped
- 15g fresh mint, chopped
- Salt and black pepper to taste
Instructions
- 1.Preheat your oven to 200°C (400°F). On a baking sheet, toss the chopped bell peppers, zucchini, and red onion with 30ml of olive oil, salt, and pepper. Roast for 20-25 minutes, or until tender and slightly caramelized.
- 2.While the vegetables are roasting, rinse the quinoa and cook it according to package directions. Typically, this involves simmering 1 part quinoa with 2 parts water for about 15 minutes until the water is absorbed.
- 3.In a skillet over medium-high heat, add the remaining 15ml of olive oil. Add the minced garlic and cook for 30 seconds, then add the ground lamb. Cook, breaking it apart with a spoon, until browned and cooked through, about 8-10 minutes. Drain any excess fat.
- 4.In a small bowl, prepare the dressing by whisking together the remaining 15ml of olive oil, the juice and zest of one lemon, chopped parsley, and chopped mint. Season with a pinch of salt and pepper.
- 5.To assemble, divide the cooked quinoa between two bowls. Top with the roasted vegetables and the cooked ground lamb. Drizzle generously with the lemon-herb dressing before serving.
