Ingredients
- 150g black rice (Venere rice)
- 400g butternut squash
- 1 small yellow onion
- 2 cloves garlic
- 750ml vegetable broth, kept warm
- 1 tbsp lemon juice
- 12 fresh sage leaves
- 2 tbsp olive oil
- 1 tbsp nutritional yeast (optional, for a cheesy flavor)
- Salt to taste
- Freshly ground black pepper to taste
Instructions
- 1.Preheat oven to 200°C. Peel and dice the butternut squash into 2cm cubes. Toss with 1 tbsp olive oil, salt, and pepper, then spread on a baking sheet and roast for 20-25 minutes until tender and caramelized.
- 2.While the squash roasts, heat the remaining 1 tbsp olive oil in a large saucepan over medium heat. Sauté one finely chopped onion for 5 minutes until soft. Add 2 minced garlic cloves and the black rice, toasting for 1 minute while stirring.
- 3.Deglaze the pan with the lemon juice. Begin adding the warm vegetable broth one ladleful at a time, stirring frequently. Allow the liquid to be almost fully absorbed before adding the next ladle.
- 4.Continue this process for 25-30 minutes, until the rice is tender with a pleasant chew and the risotto is creamy. Black rice takes longer to cook than Arborio.
- 5.While the risotto finishes, briefly fry the sage leaves in a tiny slick of oil in a small pan for 30-60 seconds until crispy. Set aside on a paper towel.
- 6.Once the risotto is cooked, gently fold in the roasted butternut squash and optional nutritional yeast. Season to taste with salt and pepper. Serve immediately, garnished with the crispy sage leaves.
