Ingredients
- 120g green or puy lentils, rinsed
- 1 large sweet potato (approx. 300g), peeled and cubed
- 20ml olive oil
- 100g fresh baby spinach
- 30g walnuts, roughly chopped
- 50g pasteurized feta cheese, crumbled
- 30ml tahini
- 30ml fresh lemon juice
- 1 clove garlic, minced
- 30-45ml water, to thin dressing
- Salt and black pepper to taste
Instructions
- 1.Preheat your oven to 200°C (400°F). Toss the sweet potato cubes with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and lightly caramelized.
- 2.While the potatoes roast, place the rinsed lentils in a small pot with 500ml of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until tender but not mushy. Drain any excess water.
- 3.In a small bowl, whisk together the tahini, lemon juice, minced garlic, and a pinch of salt. Gradually add water, 1 tablespoon at a time, whisking until you reach a smooth, pourable consistency.
- 4.In a large bowl, combine the cooked lentils, roasted sweet potatoes, and fresh spinach. The heat from the lentils and potatoes will gently wilt the spinach.
- 5.Drizzle the lemon-tahini dressing over the bowl and toss gently to combine. Divide between two plates and top with the chopped walnuts and crumbled feta before serving.
