Ingredients
- 200g black beluga lentils, rinsed
- 1 large sweet potato (approx. 300g), cubed
- 2 medium carrots (approx. 200g), cubed
- 1 large parsnip (approx. 150g), cubed
- 1 red onion, finely chopped
- 3 cloves garlic, minced
- 750ml vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 0.5 teaspoon smoked paprika
- Juice of 1/2 lemon
- Small bunch of fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- 1.Preheat your oven to 200°C (400°F). On a baking sheet, toss the cubed sweet potato, carrots, and parsnip with 1 tablespoon of olive oil, salt, and pepper.
- 2.Roast the vegetables for 20-25 minutes, or until tender and lightly caramelized at the edges. Set aside.
- 3.While the vegetables are roasting, heat the remaining 1 tablespoon of olive oil in a medium pot or Dutch oven over medium heat. Add the chopped red onion and sauté for 4-5 minutes until softened.
- 4.Add the minced garlic, ground cumin, ground coriander, and smoked paprika. Stir continuously and cook for 1 minute until fragrant.
- 5.Add the rinsed beluga lentils and the vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to a low simmer, cover, and cook for 20-25 minutes until the lentils are tender but still hold their shape.
- 6.Gently stir the roasted root vegetables into the cooked lentils. Let it simmer for another 2 minutes for the flavors to meld.
- 7.Remove the pot from the heat. Stir in the fresh lemon juice and chopped parsley. Season with additional salt and pepper to your liking before serving.
