Ingredients
- 300g lamb loin, cubed
- 150g quinoa
- 300ml water or vegetable broth
- 1 red bell pepper, chopped
- 1/2 cucumber, chopped
- 150g cherry tomatoes, halved
- 1/2 red onion, finely sliced
- 2 cloves garlic, minced
- 1 lemon, juiced
- 30ml extra virgin olive oil
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- Fresh mint and parsley, chopped
- Salt and black pepper to taste
Instructions
- 1.Rinse the quinoa under cold water. In a small pot, combine quinoa and water/broth, bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed. Fluff with a fork.
- 2.While the quinoa cooks, toss the lamb cubes in a bowl with half the olive oil, minced garlic, oregano, cumin, salt, and pepper.
- 3.Heat the remaining olive oil in a pan over medium-high heat. Add the lamb and cook for 5-7 minutes, until browned and cooked to your liking. Set aside.
- 4.In a large bowl, combine the chopped bell pepper, cucumber, cherry tomatoes, and red onion. Add the cooked quinoa and lamb.
- 5.Drizzle with lemon juice and toss with fresh mint and parsley. Season with a little more salt and pepper if needed. Serve warm.
