Ingredients
- 200g lean lamb steak, cut into 2cm cubes
- 120g quinoa, rinsed
- 240ml water
- 1 red bell pepper, diced
- 1/2 large cucumber, diced
- 150g cherry tomatoes, halved
- 1 small red onion, finely sliced
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 40g tahini
- 30ml fresh lemon juice
- 1 clove garlic, minced
- 45ml water, for the dressing
- A handful of fresh parsley, chopped
- A handful of fresh mint, chopped
- Salt and black pepper to taste
Instructions
- 1.In a small saucepan, combine the rinsed quinoa and 240ml water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it stand, covered, for 5 minutes. Fluff with a fork.
- 2.While the quinoa cooks, pat the lamb cubes dry and place them in a bowl. Add the olive oil, cumin, smoked paprika, salt, and pepper, and toss to coat evenly.
- 3.Heat a skillet or frying pan over medium-high heat. Add the seasoned lamb cubes in a single layer and sear for 2-3 minutes per side, until browned and cooked to your liking. Set aside.
- 4.To prepare the dressing, whisk together the tahini, lemon juice, and minced garlic in a small bowl. Slowly add the 45ml of water while whisking until you achieve a smooth, pourable consistency. Season with a pinch of salt.
- 5.In a large bowl, combine the cooked quinoa, diced bell pepper, cucumber, cherry tomatoes, red onion, chopped parsley, and mint.
- 6.Divide the quinoa and vegetable mixture between two bowls. Top with the seared lamb and drizzle generously with the lemon-tahini dressing before serving.
