Ingredients
- 300g lean lamb mince
- 150g quinoa, uncooked
- 1 medium cucumber, diced
- 150g cherry tomatoes, halved
- 1 small red onion, finely chopped (half for koftas, half for salad)
- 2 cloves garlic, minced
- 15g fresh mint, chopped
- 15g fresh parsley, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 lemon, juiced
- 2 tbsp extra virgin olive oil
- Salt and freshly ground black pepper to taste
Instructions
- 1.Rinse the quinoa under cold water. In a small pot, combine the quinoa with 300ml of water and a pinch of salt. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork.
- 2.While the quinoa cooks, prepare the koftas. In a bowl, combine the lamb mince, half of the chopped red onion, minced garlic, ground cumin, ground coriander, half of the chopped mint and parsley, salt, and pepper.
- 3.Mix the kofta ingredients thoroughly with your hands. Divide the mixture into 6-8 equal portions and shape them into small ovals or logs.
- 4.Heat 1 tbsp of olive oil in a large non-stick pan over medium-high heat. Cook the koftas for 8-10 minutes, turning occasionally, until browned on all sides and cooked through.
- 5.In a large bowl, combine the cooked quinoa, diced cucumber, cherry tomatoes, the remaining red onion, mint, and parsley. Drizzle with lemon juice and the remaining 1 tbsp of olive oil. Toss gently to combine and season with salt and pepper.
- 6.Serve the warm lamb koftas immediately alongside the herbed quinoa salad.
