Ingredients
- 500g ground lamb
- 200g brown or green lentils, rinsed
- 30ml olive oil
- 1 large onion, chopped
- 2 medium carrots, diced
- 3 cloves garlic, minced
- 400g can crushed tomatoes
- 750ml vegetable broth or water
- 1 tablespoon ground cumin
- 1 teaspoon ground coriander
- 150g fresh spinach
- 1 lemon, for juice
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and diced carrots, and cook until softened, about 5-7 minutes.
- 2.Add the minced garlic, ground cumin, and ground coriander. Stir and cook for another minute until fragrant.
- 3.Add the ground lamb to the pot. Break it up with a spoon and cook until browned all over, draining any excess fat if necessary.
- 4.Stir in the rinsed lentils, crushed tomatoes, and vegetable broth. Season with salt and pepper. Bring the mixture to a boil, then reduce the heat to a simmer.
- 5.Cover the pot and let it simmer for 30-35 minutes, or until the lentils are tender and the stew has thickened.
- 6.Remove the pot from the heat. Stir in the fresh spinach until it wilts. Squeeze in the juice of half a lemon.
- 7.Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley and an extra squeeze of lemon juice.
