Mediterranean Lamb Koftas with Herbed Quinoa

Ingredients
- 300g lean ground lamb
- 100g quinoa
- 1 small red onion
- 2 cloves garlic
- 1 large tomato
- 1/2 large cucumber
- 1 lemon
- Fresh parsley
- Fresh mint
- 30ml olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- Pinch of red pepper flakes
- Salt and black pepper to taste
Instructions
- 1.In a bowl, combine the ground lamb, half of the finely chopped red onion, minced garlic, 1 tablespoon chopped parsley, 1 tablespoon chopped mint, cumin, coriander, and red pepper flakes. Season with salt and pepper, mix well, and form into 6-8 oval-shaped koftas.
- 2.Rinse the quinoa thoroughly. In a small pot, bring 200ml of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
- 3.While the other components cook, prepare the relish. In a separate bowl, combine the diced cucumber, diced tomato, and the remaining finely chopped red onion. Dress with the juice of half a lemon and 15ml of olive oil. Season with salt and pepper.
- 4.Heat the remaining 15ml of olive oil in a large skillet over medium-high heat. Cook the koftas for 8-10 minutes, turning occasionally, until browned on all sides and cooked through.
- 5.Once the quinoa is cooked, fluff it with a fork. Stir in 1 tablespoon of chopped parsley and the juice of the remaining lemon half.
- 6.To serve, divide the herbed quinoa between two plates. Arrange the lamb koftas on top and spoon the fresh cucumber-tomato relish on the side.
