Ingredients
- 2 medium sweet potatoes (approx. 500g total)
- 150g tempeh, crumbled
- 200g canned black beans, rinsed and drained
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1 ripe avocado
- Juice of 1 lime
- 30ml water
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat your oven to 200°C (400°F). Scrub the sweet potatoes, pat them dry, and pierce the skin several times with a fork. Bake directly on the oven rack for 40-50 minutes, or until tender.
- 2.While the potatoes are baking, heat the olive oil in a skillet over medium heat. Add the chopped red onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- 3.Add the crumbled tempeh, cumin, and smoked paprika to the skillet. Cook for 5-7 minutes, stirring occasionally, until the tempeh is lightly browned and crispy.
- 4.Stir in the drained black beans and a pinch of salt and pepper. Cook for 2 more minutes to heat through, then remove from the heat.
- 5.To make the crema, combine the avocado flesh, lime juice, water, and a pinch of salt in a small blender or food processor. Blend until completely smooth and creamy.
- 6.Once the sweet potatoes are cooked, slice them open lengthwise. Gently fluff the inside with a fork and season with a little salt and pepper.
- 7.Generously fill each sweet potato with the spiced tempeh and black bean mixture. Drizzle with the avocado-lime crema and serve immediately.
