Ingredients
- 1 kg sweet potatoes, peeled and cubed
- 3 tbsp olive oil, divided
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 200g brown or green lentils, rinsed
- 800ml low-sodium vegetable broth
- 400g canned chopped tomatoes
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- Pinch of nutmeg
- Salt and black pepper to taste
Instructions
- 1.Place the cubed sweet potatoes in a large pot, cover with water, bring to a boil and cook for 15-20 minutes until very tender. Meanwhile, preheat your oven to 200°C.
- 2.While the potatoes cook, heat 1 tbsp of olive oil in a large pan over medium heat. Sauté the onion, carrots, and celery for 5-7 minutes until softened. Add the minced garlic and cook for 1 more minute until fragrant.
- 3.Stir in the cumin, paprika, and thyme. Add the rinsed lentils, vegetable broth, and chopped tomatoes. Bring to a simmer, then reduce heat, cover, and cook for 20-25 minutes until the lentils are tender and the sauce has thickened.
- 4.Drain the cooked sweet potatoes and return them to the pot. Add 2 tbsp of olive oil, a pinch of nutmeg, salt, and pepper. Mash until smooth and creamy.
- 5.Season the lentil filling with salt and pepper to your preference. Transfer the filling to a 2-liter ovenproof baking dish.
- 6.Spoon the sweet potato mash over the lentil filling and spread it evenly. Use a fork to create a textured surface if desired.
- 7.Bake for 20-25 minutes, or until the topping is lightly golden and the filling is bubbling at the edges. Let it rest for 5 minutes before serving.
