Ingredients
- 300g lean lamb mince
- 250g cooked brown or green lentils (canned, drained)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 150g cherry tomatoes, halved
- 100g fresh spinach
- 150ml vegetable broth or water
- 15ml olive oil
- 1 lemon, for juice
- 1 tsp ground cumin
- 1 tsp ground coriander
- Small handful fresh mint, chopped
- Salt and black pepper to taste
Instructions
- 1.Heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and sauté for 3-4 minutes until softened.
- 2.Add the minced garlic, ground cumin, and ground coriander. Cook for 1 minute more until fragrant.
- 3.Add the lean lamb mince to the skillet. Cook for 5-7 minutes, breaking it up with a spoon, until fully browned. Drain any excess fat if necessary.
- 4.Stir in the drained lentils, halved cherry tomatoes, and vegetable broth. Season with salt and pepper. Bring to a simmer and cook for 5 minutes to allow the flavors to meld.
- 5.Add the fresh spinach to the pan in batches, stirring gently until it has all wilted into the skillet, which should take about 2-3 minutes.
- 6.Remove from the heat. Squeeze in the juice of half a lemon and stir through the chopped fresh mint. Serve immediately.
