Ingredients
- 1 large head cauliflower (approx. 800g), cut into florets
- 1 can (400g) chickpeas, rinsed and drained
- 1 large red onion, cut into wedges
- 45 ml olive oil
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp turmeric powder
- 1 tsp garlic powder
- Salt and freshly ground black pepper to taste
- 60g tahini
- 45 ml fresh lemon juice
- 1 small bunch fresh parsley (approx. 20g), finely chopped
- 1 clove garlic, minced
- 60 ml water
Instructions
- 1.Preheat your oven to 200°C. Line a large baking sheet with parchment paper.
- 2.In a large bowl, combine the cauliflower florets, drained chickpeas, and red onion wedges. Drizzle with olive oil and sprinkle with smoked paprika, cumin, turmeric, garlic powder, salt, and pepper.
- 3.Toss everything together until the vegetables are evenly coated. Spread the mixture in a single layer on the prepared baking sheet.
- 4.Roast for 25-30 minutes, tossing halfway through, until the cauliflower is tender and has golden-brown, caramelized edges.
- 5.While the vegetables roast, prepare the drizzle. In a small bowl, whisk together the tahini, lemon juice, and minced garlic.
- 6.Gradually add the water, whisking continuously, until you achieve a smooth, pourable sauce. Stir in the chopped parsley and season with a pinch of salt.
- 7.Arrange the roasted cauliflower and chickpea mixture on a platter and generously drizzle with the tahini-herb sauce before serving.
