Ingredients
- 500g ground lamb
- 250g quinoa
- 500ml water or vegetable broth
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 large zucchini, chopped
- 200g cherry tomatoes, halved
- 1 red onion, chopped
- 2 cloves garlic, minced
- 3 tablespoons olive oil
- 1 lemon, juiced
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- 1.Preheat your oven to 200°C. On a baking sheet, toss the chopped bell peppers, zucchini, cherry tomatoes, and half the red onion with 1 tablespoon of olive oil, salt, and pepper. Roast for 20-25 minutes until tender.
- 2.While vegetables roast, rinse the quinoa. In a medium saucepan, bring 500ml of water or broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes until the liquid is absorbed. Fluff with a fork.
- 3.Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the remaining red onion and cook for 3-4 minutes until softened. Add the minced garlic, oregano, and cumin, and cook for 1 minute until fragrant.
- 4.Add the ground lamb to the skillet. Cook for 8-10 minutes, breaking it up with a spoon, until browned and cooked through. Drain excess fat and season with salt and pepper.
- 5.To serve, divide the cooked quinoa among four bowls. Top with the roasted vegetables and the seasoned ground lamb. Drizzle with lemon juice, the remaining olive oil, and garnish with fresh parsley.
