Ingredients
- 300g lean ground lamb
- 100g quinoa
- 200ml water or vegetable broth
- 150g plain Greek yogurt
- 1/2 red onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cucumber, grated and squeezed dry
- 15g fresh parsley, chopped
- 10g fresh mint, chopped
- 30ml olive oil
- 30ml lemon juice
- 5g ground cumin
- Salt and freshly ground black pepper to taste
Instructions
- 1.Rinse the quinoa under cold water. In a small saucepan, combine the quinoa and 200ml of water or broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the liquid is absorbed. Fluff with a fork.
- 2.While the quinoa cooks, prepare the patties. In a bowl, combine the ground lamb, chopped red onion, minced garlic, parsley, half of the chopped mint, cumin, salt, and pepper. Mix gently with your hands until just combined.
- 3.Form the mixture into 4-6 small, even-sized patties. Heat the olive oil in a large skillet over medium-high heat. Cook the patties for 4-5 minutes per side, until browned and cooked through.
- 4.Prepare the sauce by whisking together the Greek yogurt, grated cucumber, the remaining chopped mint, lemon juice, and a pinch of salt in a small bowl.
- 5.To serve, divide the cooked quinoa between two plates. Top with the lamb patties and drizzle generously with the minted yogurt sauce.
