Ingredients
- 250g lean lamb mince
- 100g dried brown lentils
- 200g carrots, peeled and cubed
- 150g parsnip, peeled and cubed
- 1 small red onion, thinly sliced
- 2 cloves garlic, minced
- 15g fresh mint, finely chopped
- 15g fresh parsley, finely chopped
- 45ml extra virgin olive oil
- 1 lemon, for juice
- 1 tsp Dijon mustard
- 1/2 tsp ground cumin
- Sea salt and freshly ground black pepper
Instructions
- 1.Preheat your oven to 200°C. On a baking tray, toss the cubed carrots and parsnip with 15ml of olive oil, salt, and pepper. Roast for 25-30 minutes until tender and golden.
- 2.While the vegetables roast, rinse the lentils. Place in a saucepan, cover with water, bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain thoroughly.
- 3.In a medium bowl, combine the lamb mince, chopped mint, half of the parsley, one minced garlic clove, ground cumin, and a pinch of salt and pepper. Mix gently and form into 4-6 small patties.
- 4.Heat 15ml of olive oil in a frying pan over medium-high heat. Cook the lamb patties for 3-4 minutes per side, until browned and cooked through.
- 5.Prepare the vinaigrette by whisking together the juice of one lemon, the remaining 15ml of olive oil, the second minced garlic clove, and Dijon mustard in a small bowl. Season with salt and pepper.
- 6.In a large serving bowl, combine the warm lentils, roasted vegetables, and most of the sliced red onion. Pour over the vinaigrette and toss to combine. Top the salad with the lamb patties and garnish with the remaining fresh parsley and red onion before serving.
