Ingredients
- 300g lean lamb stewing meat, cubed
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 1/2 tsp ground cinnamon
- 400g can chopped tomatoes
- 250ml low-sodium vegetable broth
- 200g can chickpeas, rinsed and drained
- 50g dried apricots, chopped
- 100g quinoa
- Fresh cilantro or parsley for garnish
- Salt and black pepper to taste
Instructions
- 1.Pat the lamb cubes dry and season with salt and pepper. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Brown the lamb on all sides, then remove from the pot and set aside.
- 2.Reduce the heat to medium, add the chopped onion, and sauté for 5-7 minutes until softened. Add the minced garlic, cumin, turmeric, and cinnamon, and cook for another minute until fragrant.
- 3.Return the lamb to the pot. Pour in the chopped tomatoes and vegetable broth, and add the chickpeas and chopped apricots. Stir everything together.
- 4.Bring the stew to a boil, then reduce the heat to low, cover, and let it simmer for 35-40 minutes, or until the lamb is tender and the sauce has thickened.
- 5.While the stew simmers, rinse the quinoa under cold water. In a separate small pot, combine the quinoa with 200ml of water. Bring to a boil, then cover, reduce heat to low, and cook for 15 minutes until the water is absorbed. Fluff with a fork.
- 6.Serve the lamb stew over the fluffy quinoa, garnished with fresh chopped cilantro or parsley.
