Ingredients
- 400g lean lamb, diced (from the leg)
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 200g brown or green lentils, rinsed
- 1 liter low-sodium vegetable broth
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 200g fresh spinach
- Salt to taste
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium-high heat. Pat the lamb dry and season with salt and pepper. Sear the lamb in batches until browned on all sides, then set aside.
- 2.Reduce the heat to medium. Add the chopped onion, carrots, and celery to the pot. Sauté for 5-7 minutes until softened.
- 3.Add the minced garlic, dried rosemary, and thyme. Cook for another minute until fragrant.
- 4.Return the browned lamb to the pot. Add the rinsed lentils and the low-sodium broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 35-40 minutes, or until the lentils are tender.
- 5.Stir in the fresh spinach a handful at a time, allowing it to wilt into the stew. Season with additional salt and pepper to taste before serving.
