- 150g brown or green lentils, rinsed
- 750ml low-sodium vegetable broth
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 100g fresh spinach
- Juice of 1/2 lemon
- Salt and pepper to taste
Instructions
- 1.Heat olive oil in a large pot over medium heat. Sauté the chopped onion until soft, about 5 minutes.
- 2.Add the minced garlic and grated ginger, cooking for one more minute until fragrant.
- 3.Stir in the cumin, coriander, and turmeric, and cook for 30 seconds to release their aromas.
- 4.Add the cubed sweet potato, rinsed lentils, and vegetable broth. Season with salt and pepper.
- 5.Bring the stew to a boil, then reduce the heat to a simmer. Cover and cook for 25-30 minutes, until the lentils and sweet potatoes are tender.
- 6.Stir in the fresh spinach and allow it to wilt into the stew, which takes about 2-3 minutes.
- 7.Squeeze in the fresh lemon juice, stir, and adjust seasoning with salt and pepper as needed before serving.
