Ingredients
- 250g lamb loin or leg steaks, trimmed of excess fat
- 120g green or brown lentils, rinsed
- 300g sweet potato, peeled and cut into 2cm cubes
- 100g fresh baby spinach
- 1 small red onion, thinly sliced
- 2 cloves garlic, minced
- 1 lemon, for juice
- 15g fresh mint, chopped
- 30ml extra virgin olive oil
- Salt and black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. On a baking tray, toss the cubed sweet potato with 15ml of olive oil, salt, and pepper. Roast for 20-25 minutes until tender and lightly browned.
- 2.While the potato roasts, place the rinsed lentils in a saucepan with 500ml of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain well.
- 3.Season the lamb steaks with salt and pepper. Heat the remaining 15ml of olive oil in a frying pan over medium-high heat. Cook the lamb for 3-4 minutes per side, ensuring it is cooked through. Set aside to rest for 5 minutes, then slice.
- 4.In a large serving bowl, whisk together the juice of the lemon, minced garlic, and chopped fresh mint to create the dressing.
- 5.Add the warm cooked lentils, roasted sweet potato, sliced red onion, and fresh spinach to the bowl with the dressing. Toss gently until the spinach just begins to wilt from the heat.
- 6.Top the lentil and vegetable mixture with the sliced lamb and serve immediately for a nutritious and complete meal.
