Ingredients
- 100g black rice
- 400g can of chickpeas, drained and rinsed
- 1 medium sweet potato (approx. 200g), cubed
- 2 medium carrots (approx. 150g), sliced
- 1 parsnip (approx. 150g), cubed
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 2 tablespoons tahini
- 1 tablespoon white miso paste
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 45ml water, or as needed
- Salt and black pepper to taste
- Fresh parsley, for garnish
Instructions
- 1.Preheat your oven to 200°C (400°F). Cook the black rice according to package directions. This usually involves simmering 1 part rice in 2 parts water for about 30-35 minutes.
- 2.On a large baking sheet, toss the cubed sweet potato, carrots, and parsnip with 1 tablespoon of olive oil, dried oregano, salt, and pepper. Arrange in a single layer.
- 3.Roast the vegetables for 20 minutes. Then, add the drained chickpeas to the baking sheet, drizzle with the remaining olive oil, and toss gently. Return to the oven and roast for another 10-15 minutes, until vegetables are tender and chickpeas are slightly crispy.
- 4.While the vegetables roast, prepare the dressing. In a small bowl, whisk together the tahini, miso paste, lemon juice, and minced garlic. Slowly whisk in the water until you reach a smooth, pourable consistency.
- 5.To serve, divide the cooked black rice between two bowls. Top with the roasted vegetable and chickpea mixture. Drizzle generously with the miso-tahini dressing and garnish with fresh parsley.
