Mediterranean Lamb Koftas with Herbed Lentil Salad

Ingredients
- 250g lean ground lamb
- 100g dry green or brown lentils
- 150g cherry tomatoes, halved
- 1 small onion
- 1 small cucumber, diced
- 45g fresh parsley, chopped
- 15g fresh mint, chopped
- 2 lemons
- 2 cloves garlic, minced
- 30g tahini
- 15ml olive oil
- 5g ground cumin
- 5g ground coriander
- Salt and black pepper to taste
Instructions
- 1.Cook the lentils in boiling water according to package directions, typically 15-20 minutes. Once tender, drain and set aside to cool slightly.
- 2.While lentils cook, combine the ground lamb, 1 minced garlic clove, half a grated onion, cumin, coriander, 15g of chopped parsley, salt, and pepper in a bowl. Mix well and form into 6-8 small oval-shaped koftas.
- 3.Heat the olive oil in a large frying pan over medium-high heat. Add the koftas and cook for 8-10 minutes, turning regularly until browned on all sides and cooked through.
- 4.In a separate large bowl, prepare the salad by combining the cooked lentils, halved cherry tomatoes, diced cucumber, the remaining 30g of chopped parsley, and all of the chopped mint.
- 5.For the sauce, whisk together the tahini, juice of 1 lemon, the second minced garlic clove, and 30-45ml of water until you have a smooth, pourable consistency. Season with a pinch of salt.
- 6.Dress the lentil salad with the juice from the second lemon, salt, and pepper. Divide the salad between two plates, top with the warm lamb koftas, and finish with a generous drizzle of the tahini sauce.
