Ingredients
- 900g sweet potatoes, peeled and chopped
- 2 tablespoons olive oil, divided
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 200g mushrooms, chopped
- 200g brown or green lentils, rinsed
- 2 tablespoons tomato paste
- 700ml vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
Instructions
- 1.Place the chopped sweet potatoes in a large pot, cover with water, and bring to a boil. Cook for 15-20 minutes, or until fork-tender. Drain well.
- 2.While the potatoes are cooking, heat 1 tablespoon of olive oil in a large pan or pot over medium heat. Add the diced onion and carrots, and cook for 5-7 minutes until softened.
- 3.Add the minced garlic and chopped mushrooms to the pan. Cook for another 5 minutes, until the mushrooms have released their moisture and started to brown.
- 4.Stir in the tomato paste, dried thyme, and smoked paprika. Cook for 1 minute until fragrant.
- 5.Add the rinsed lentils and vegetable broth to the pan. Bring to a simmer, then reduce the heat, cover, and let it cook for 25-30 minutes, or until the lentils are tender and the mixture has thickened.
- 6.While the lentil mixture simmers, mash the cooked sweet potatoes with the remaining 1 tablespoon of olive oil, salt, and pepper until smooth and creamy.
- 7.Preheat your oven to 200°C (400°F). Spread the lentil filling evenly in a baking dish. Top with the sweet potato mash, using a fork to create a textured surface.
- 8.Bake for 15-20 minutes, or until the filling is bubbling and the sweet potato topping is lightly golden. Let it rest for a few minutes before serving.
