Ingredients
- 2 large bell peppers (any color)
- 150g lean ground lamb
- 75g uncooked quinoa
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 200ml low-sodium vegetable broth
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh mint
- 1 teaspoon dried oregano
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.Preheat your oven to 200°C (180°C fan). Slice the bell peppers in half lengthwise and remove the seeds and membranes. Rinse the quinoa thoroughly under cold water.
- 2.In a small saucepan, combine the rinsed quinoa with 150ml of the vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the liquid is absorbed. Fluff with a fork.
- 3.While the quinoa cooks, heat the olive oil in a skillet over medium-high heat. Add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- 4.Add the ground lamb to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat from the pan.
- 5.Remove the skillet from the heat. Stir in the cooked quinoa, the remaining 50ml of vegetable broth, fresh parsley, mint, dried oregano, and lemon juice. Season with salt and pepper to taste.
- 6.Arrange the pepper halves in a baking dish. Spoon the lamb and quinoa mixture evenly into each pepper half.
- 7.Pour a small amount of water (about 50ml) into the bottom of the baking dish to prevent the peppers from sticking and to help them steam.
- 8.Bake for 25-30 minutes, or until the peppers are tender and the filling is heated through. Serve warm.
