Ingredients
- 500g lean ground lamb
- 200g cooked green or brown lentils
- 1 red onion, finely chopped
- 3 cloves garlic, minced
- 30g mixed fresh mint and parsley, chopped
- 1 large egg
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 30ml olive oil
- 200g plain Greek yogurt
- 1 lemon, juiced
- Salt and black pepper to taste
Instructions
- 1.In a large bowl, combine the ground lamb, cooked lentils, chopped red onion, 2 minced garlic cloves, chopped herbs, egg, cumin, coriander, salt, and pepper.
- 2.Mix everything together with your hands until well combined, but do not overmix. Shape the mixture into 8 evenly-sized patties.
- 3.Heat the olive oil in a large non-stick skillet over medium-high heat. Carefully place the patties in the pan, ensuring not to overcrowd it (cook in batches if needed).
- 4.Cook for 4-5 minutes on each side, until golden brown, crisp, and cooked through. Transfer to a plate.
- 5.While the patties cook, prepare the sauce by mixing the Greek yogurt, lemon juice, the remaining 1 minced garlic clove, and a pinch of salt in a small bowl.
- 6.Serve the warm lamb and lentil patties immediately with the cool yogurt sauce and a side salad or steamed vegetables.
