Ingredients
- 150g brown or green lentils, rinsed
- 1 large sweet potato (approx. 400g), peeled and cubed
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 100g kale, stems removed and leaves chopped
- 15ml olive oil
- 750ml vegetable broth
- 5g ground cumin
- 5g ground coriander
- 2g turmeric powder
- Juice of 1/2 lemon
- Salt and freshly ground black pepper to taste
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook for 5-7 minutes until softened and translucent.
- 2.Add the minced garlic, ground cumin, ground coriander, and turmeric. Cook for 1 minute more until fragrant, stirring constantly.
- 3.Stir in the cubed sweet potato, rinsed lentils, and vegetable broth. Season with salt and pepper. Bring the mixture to a boil.
- 4.Once boiling, reduce the heat to low, cover, and let it simmer for 20-25 minutes, or until the lentils and sweet potatoes are tender.
- 5.Stir in the chopped kale and cook for another 3-5 minutes until the leaves have wilted.
- 6.Remove from the heat and stir in the fresh lemon juice. Adjust seasoning with salt and pepper if needed before serving.
