Ingredients
- 250g lean lamb mince
- 1 medium aubergine, cut into 2-3 cm cubes
- 100g quinoa
- 80g pomegranate seeds
- 15g fresh parsley, finely chopped
- 15g fresh mint, finely chopped
- 1/2 cucumber, finely diced
- 2 spring onions, thinly sliced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- 1 lemon (for juice)
- 25ml extra virgin olive oil
- Salt and black pepper to taste
Instructions
- 1.Cook the quinoa according to package instructions. Once cooked, fluff with a fork and set aside to cool completely.
- 2.In a bowl, combine the lean lamb mince, minced garlic, ground cumin, ground coriander, smoked paprika, salt, and pepper. Mix well and form into 12-14 small meatballs.
- 3.Thread the meatballs and aubergine cubes onto skewers, alternating between them. Lightly brush the skewers with about 10ml of olive oil.
- 4.Heat a griddle pan or large frying pan over medium-high heat. Cook the skewers for 10-12 minutes, turning regularly, until the lamb is cooked through and the aubergine is tender and lightly charred.
- 5.While the skewers are cooking, prepare the tabbouleh. In a large bowl, combine the cooled quinoa, pomegranate seeds, chopped parsley, mint, diced cucumber, and sliced spring onions.
- 6.In a small bowl, whisk together the juice of one lemon and the remaining 15ml of olive oil. Pour the dressing over the tabbouleh, season with salt and pepper, and toss gently to combine.
- 7.Serve the hot lamb and aubergine skewers immediately with the fresh quinoa tabbouleh on the side.
