Herbed Lamb Patties with Warm Lentil & Root Vegetable Salad

Ingredients
- 250g lean lamb mince
- 100g dry Puy lentils
- 200g carrots, peeled
- 150g parsnip, peeled
- 1 shallot, finely chopped
- 2 cloves garlic, minced
- 15g fresh mint, finely chopped
- 15g fresh parsley, finely chopped
- 30ml extra virgin olive oil, divided
- 1 lemon, for juice
- 5ml Dijon mustard
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat your oven to 200°C (400°F). Chop the carrots and parsnip into 2cm cubes, toss with 15ml of olive oil, salt, and pepper on a baking tray. Roast for 20-25 minutes, or until tender and lightly caramelized.
- 2.While the vegetables roast, rinse the Puy lentils and place them in a small saucepan with 500ml of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender but not mushy. Drain any excess water.
- 3.In a bowl, combine the lamb mince, half the minced garlic, half the chopped mint and parsley, salt, and pepper. Mix gently with your hands and form into 4-6 small patties.
- 4.Heat the remaining 15ml of olive oil in a non-stick frying pan over medium-high heat. Cook the patties for 3-4 minutes per side, until browned and cooked through. Set aside to rest.
- 5.To make the dressing, whisk together the lemon juice, Dijon mustard, the remaining garlic, mint, parsley, and the finely chopped shallot in a large bowl. Season with salt and pepper.
- 6.Add the warm roasted vegetables and drained lentils to the bowl with the dressing. Toss gently to combine everything.
- 7.Divide the warm lentil and vegetable salad between two plates and top with the herbed lamb patties to serve.
