Ingredientes

• 500g ground turkey
• 700g sweet potatoes
• 150g kale, tough stems removed
• 1 large apple (e.g., Gala or Fuji)
• 1 medium red onion
• 3 cloves garlic
• 30ml olive oil
• 15ml apple cider vinegar
• 5g Dijon mustard
• 1 teaspoon smoked paprika
• 1 teaspoon ground cumin
• Salt and freshly ground black pepper to taste

Instruções

1. 1.Prepare the ingredients. Dice the sweet potatoes into 1.5cm cubes. Finely chop the red onion and mince the garlic. Finely slice the kale. Julienne or grate the apple.
2. 2.In a medium bowl, whisk together the apple cider vinegar, Dijon mustard, and 15ml of olive oil to create the slaw dressing. Add the julienned apple and sliced kale, toss to combine, season with a pinch of salt and pepper, and set aside.
3. 3.Heat the remaining 15ml of olive oil in a large skillet or pan over medium-high heat. Add the diced sweet potatoes and cook for 10-12 minutes, stirring occasionally, until they begin to soften and brown at the edges.
4. 4.Add the chopped red onion to the skillet and cook for another 3-4 minutes until softened. Stir in the minced garlic, smoked paprika, and cumin, and cook for 1 minute until fragrant.
5. 5.Push the vegetable mixture to one side of the skillet. Add the ground turkey to the empty space, breaking it up with a spoon. Cook for 5-7 minutes until fully browned.
6. 6.Combine the cooked turkey with the sweet potato mixture in the skillet. Season generously with salt and pepper, and cook for an additional 2-3 minutes for the flavors to meld.
7. 7.To serve, divide the warm turkey and sweet potato hash among plates and top with a generous portion of the fresh kale-apple slaw.
