Ingredients
- 300g ground lamb
- 300g sweet potato, peeled and diced
- 200g zucchini, diced
- 100g fresh spinach
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 30ml extra virgin olive oil
- 1 tbsp fresh rosemary, finely chopped
- 1 tsp dried oregano
- 1/2 lemon, for juice
- Sea salt to taste
Instructions
- In a bowl, combine the ground lamb, half of the minced garlic, chopped rosemary, oregano, and a pinch of sea salt. Mix well and form into 4 small patties. Set aside.
- Heat 15ml of olive oil in a large skillet over medium heat. Add the chopped onion and the remaining garlic, and sauté for 2–3 minutes until softened and fragrant.
- Add the diced sweet potato to the skillet with a splash of water. Cover and cook for 8–10 minutes, stirring occasionally, until the sweet potato begins to soften.
- Add the diced zucchini to the skillet and continue to cook for another 5–7 minutes, until all vegetables are tender. Stir in the fresh spinach and cook until just wilted. Season the hash with sea salt and a squeeze of lemon juice.
- While the hash finishes, heat the remaining 15ml of olive oil in a separate pan over medium-high heat. Cook the lamb patties for 3–4 minutes per side, or until cooked through and nicely browned.
- Serve the herbed lamb patties immediately alongside the warm sweet potato and zucchini hash.
