- 1 cup diced bell pepper

Instructions
- 1.Rinse the quinoa thoroughly under cold water.
- 2.In a medium pot, bring 2 cups of water to a boil, add quinoa, reduce heat, cover, and simmer for 15 minutes until tender.
- 3.Heat olive oil in a skillet over medium heat, add zucchini and bell pepper, sauté for 5–7 minutes until softened.
- 4.Add spinach to the skillet and cook until wilted, about 2 minutes.
- 5.Season vegetables with salt, pepper, and paprika.
