- 1.Preheat your oven to 200°C. Cut the zucchini into 2cm chunks and leave the cherry tomatoes whole.
- 2.Slice the halloumi block into 1cm thick slices.
- 3.On a large baking tray, combine the zucchini, cherry tomatoes, and halloumi slices. Drizzle with olive oil, and sprinkle with minced garlic, dried oregano, salt, and pepper.
- 4.Toss everything gently to ensure it's evenly coated, then spread into a single layer.
- 5.Bake for 20-25 minutes, or until the vegetables are tender and the halloumi is golden brown and crisp at the edges.
- 6.While it bakes, combine the chopped fresh parsley, mint, lemon zest, and lemon juice in a small bowl.
- 7.Remove the tray from the oven and immediately drizzle the fresh herb-lemon mixture over the hot halloumi and vegetables. Serve warm.
