- 70g rolled oats

- 30g tahini
- 1 tablespoon lemon juice
- 15g fresh parsley, chopped
- 1 tablespoon olive oil

Instructions
- Steam or boil the sweet potato cubes for 15–20 minutes until very tender. Drain well and mash thoroughly in a large bowl.
- Add the drained black beans to the bowl and roughly mash them with a fork, leaving some texture. Stir in the chopped onion, minced garlic, rolled oats, cumin, smoked paprika, salt, and pepper.
- Mix until well combined and form the mixture into 4–6 equal-sized patties. If the mixture is too sticky, add a little more oats.
- Heat the olive oil in a large non-stick skillet over medium heat. Carefully place the patties in the skillet and cook for 4–5 minutes per side, until golden brown and firm.
- While the patties cook, prepare the sauce. In a small bowl, whisk together the tahini, lemon juice, chopped parsley, and 2–3 tablespoons of water until you reach a smooth, drizzly consistency. Season with salt.
