- 1.5 lbs chicken breast, cut into bite-sized pieces
- 2 bell peppers, sliced
- 1 large onion, sliced
- 2 cups mushrooms, sliced
- 4 cups cauliflower rice
- 3 tbsp low-sodium soy sauce
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
- Juice of 1/2 lemon

Instrucciones
- 1.Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- 2.Add chicken, season with salt and pepper, and cook for about 6-7 minutes until lightly browned and cooked through. Remove and set aside.
- 3.In the same skillet, add the remaining olive oil, onion, garlic, bell peppers, and mushrooms. Cook for 6-8 minutes until softened.
- 4.Return chicken to the pan, stir in soy sauce and lemon juice, and cook for another 3 minutes to combine flavors.
- 5.In a separate skillet, lightly sauté cauliflower rice with a pinch of salt and pepper for 5 minutes until tender.
