Ingredients
- 300g butternut squash, peeled and cubed
- 50g red lentils, rinsed
- 30g unsulphured dried apricots, chopped
- 400ml water
- 5ml extra virgin olive oil
Instructions
- In a small saucepan, combine the cubed butternut squash, rinsed red lentils, chopped apricots, and water.
- Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover, and let it simmer for 15–20 minutes, or until the squash is very tender and the lentils are fully cooked.
- Remove the saucepan from the heat and allow it to cool for a few minutes.
- Carefully transfer the mixture to a blender. Add the extra virgin olive oil.
- Blend until completely smooth. Add a little more water if necessary to achieve your desired consistency. Serve warm or portion into containers for freezing.
