Ingredients
- 1 medium sweet potato (approx. 200g), peeled and diced
- 50g red lentils, rinsed
- 1 small zucchini (approx. 150g), diced
- 400ml water or unsalted vegetable broth
- 1 teaspoon olive oil
- 1 pinch ground cumin (optional)
Instructions
- Heat the olive oil in a small saucepan over medium heat. Add the diced sweet potato and cook for 3–4 minutes until slightly softened.
- Add the rinsed red lentils, diced zucchini, optional cumin, and water to the saucepan. Bring to a boil.
- Reduce the heat, cover, and simmer for 15–20 minutes, or until the lentils and vegetables are completely tender.
- Carefully transfer the mixture to a blender or use an immersion blender to purée until smooth. Add a little more water if needed to reach your baby's preferred consistency.
- Allow to cool before serving. Store extra portions in the refrigerator for up to 3 days or freeze in ice cube trays for later use.
Tips & Substitutions
- Make it creamier: Stir in a spoonful of plain yogurt or a dash of breast milk/formula after blending for extra smoothness.
- Adjust texture: For older babies, leave a few small chunks to encourage chewing practice.
- Flavor variation: Substitute zucchini with carrots or add a pinch of mild paprika for a subtly different flavor profile.
