- Small bunch of fresh cilantro, chopped
Instructions
- Season the lamb: Toss the lamb cubes with salt and pepper. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the lamb in batches, then remove and set aside.
- Build the flavor base: Lower the heat to medium. Add the diced onion and cook for 5–7 minutes until softened. Stir in the garlic, cumin, coriander, ginger, turmeric, and cinnamon, cooking for another minute until fragrant.
