Ingredients
- 300g lamb loin chops (about 2 chops)
- 250g asparagus, woody ends trimmed
- 200g cherry tomatoes
- 2 cloves garlic, minced
- 1 sprig fresh rosemary, finely chopped
- 30ml olive oil
- 1/2 lemon, for juice
- Salt to taste
- Black pepper to taste
Instructions
- Pat the lamb chops dry and season generously with salt and pepper.
- Heat 15ml of olive oil in a large skillet over medium-high heat. Add the lamb chops and sear for 3–4 minutes per side for medium-rare. Remove from the pan and set aside to rest.
- Reduce the heat to medium. Add the remaining 15ml of olive oil, asparagus, and cherry tomatoes to the same pan. Sauté for 5–7 minutes, until the asparagus is tender-crisp and the tomatoes begin to blister.
- Add the minced garlic and chopped rosemary to the pan and cook for one more minute until fragrant, stirring to coat the vegetables.
- Squeeze the juice of half a lemon over the vegetables, then return the lamb chops to the pan briefly to warm through. Serve immediately.
Tips & Substitutions
- Swap the lamb: Try boneless lamb loin or even beef medallions if you prefer a different protein.
- Make it dairy-free: This recipe is naturally dairy-free, but you can add a dollop of herbed yogurt sauce for creaminess if desired.
- Add extra veggies: Bell peppers, zucchini, or mushrooms complement the flavors beautifully and boost the nutrition profile.
