Ingredients
- 150g cod fillet, skinless and boneless
- 100g red lentils, rinsed
- 1 medium sweet potato (approx. 200g), peeled and diced
- 50g dried apricots, finely chopped
- 1 tablespoon olive oil
- 1/2 small onion, finely chopped
- 1 clove garlic, minced
- 500ml low-sodium vegetable stock or water
- 1 pinch of turmeric
Instructions
- Heat olive oil in a saucepan over medium heat. Sauté the finely chopped onion for 2-3 minutes until soft. Add the minced garlic and turmeric and cook for 1 more minute.
- Add the diced sweet potato, rinsed red lentils, chopped apricots, and stock or water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until lentils and vegetables are tender.
- Place the cod fillet on top of the stew, cover the pan, and allow it to steam for 5-7 minutes until the fish is opaque and flakes easily.
- Remove from heat. Carefully flake the cod into the stew with a fork, ensuring there are no bones.
- For a smooth puree, blend the mixture until the desired consistency is reached. For older toddlers, simply mash with a fork for a chunkier texture. Allow to cool before serving.
