Instructions

- Add zucchini, bell peppers, and remaining olive oil. Cook for another 5 minutes.
- Stir in chopped tomatoes, thyme, rosemary, salt, and pepper. Reduce heat and simmer uncovered for 15 minutes until vegetables are tender and flavors meld.
- Garnish with fresh parsley before serving.
